Roasted Vegetable Rice Salad
Ingredients
- 2 medium zucchini, chopped
- 1 medium red bell pepper, chopped
- 1 box (10 oz.) frozen whole kernel corn, thawed

Instructions
- Preheat oven to 425°. Line jelly-roll pan with aluminum foil. Toss zucchini, purple pepper, corn, garlic, 1 tablespoon oil and a pair of teaspoons Knorr Rooster flavor Bouillon on pan. Roast, stirring once, 35 minutes or until Vegetables are tender.
